The difference between fruit paste and fruit jelly.
The difference between our fruit jellies and our fruit pâtes de fruits lies not in the recipe, but in the finish. Both are slow-cooked in a cauldron to preserve the aromatic intensity of the fruit. After cooking, the fruit jellies are cut with a guitar cutter then finely coated by hand with sugar, which gives them a slightly crystallized surface and a slightly firmer texture on the outside. The fruit pâtes de fruits, on the other hand, are cut and then packaged without a sugar coating: their texture is smoother, softer, and the taste often appears more delicate and less sweet in the mouth.

Artisanal
fruit paste
In our human-sized workshop, each creation is born from a patient and precise gesture. We select fruits for their ripeness, their aromatic intensity, and, when possible, their PGI or PDO origin. Slow cooking in a copper pot concentrates the flavors and reveals the full depth of the fruit, without artifice.
Once the paste has set, it is cut with a guitar cutter to obtain a clean and regular shape, then delicately finished by hand. This artisanal requirement results in fruit pâtes with natural colors, melting in the mouth, true to their authentic taste.
